Ingredients
8 oz breakfast sausage links or patties, casings removed
4 slices bacon, chopped
1/2 medium onion, diced
1/2 medium bell pepper, diced
8 large eggs
1/4 cup heavy cream
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1 cup shredded cheddar cheese
2 tbsp chopped fresh parsley (optional)
Instructions
Heat a large cast-iron skillet over medium-high heat. Add sausage and bacon; cook, breaking up sausage, until browned, about 5 minutes. Remove with a slotted spoon, leaving drippings in skillet.
Reduce heat to medium. Add onion and bell pepper to skillet; cook until softened, about 3 minutes.
In a bowl, whisk eggs, heavy cream, salt, pepper, and garlic powder until well combined.
Return sausage and bacon to skillet, spreading evenly. Pour egg mixture over the top. Cook without stirring until edges begin to set, about 2 minutes.
Using a spatula, gently push cooked eggs from edges toward center, tilting skillet to let uncooked eggs flow to edges. Continue until eggs are mostly set but still slightly soft, about 3-4 minutes.
Sprinkle cheese over the top. Cover skillet, remove from heat, and let stand until cheese melts, about 2 minutes. Garnish with parsley if desired. Serve hot.
