  3. Cover the jar with a cloth or coffee filter and secure with a rubber band. Let it ferment at room temperature (70-75°F) for 24-48 hours, until slightly fizzy and tangy.
  4. Taste the kefir water; it should be less sweet and have a mild, yeasty flavor. If desired, ferment longer for more fizz.
  5. Strain out the kefir grains using a plastic or stainless steel strainer (avoid metal reactivity). Reserve the grains for your next batch.
  6. Pour the liquid into airtight bottles (leave 1 inch headspace). Seal and let sit at room temperature for 12-24 hours for carbonation, then refrigerate.
  7. Serve chilled. The soda will keep in the refrigerator for up to 2 weeks.
