  1. Combine Scotch bonnet peppers, green onions, garlic, thyme, allspice, ginger, brown sugar, salt, black pepper, cinnamon, nutmeg, soy sauce, vegetable oil, and lime juice in a blender or food processor. Blend until smooth to make the jerk marinade.
  2. Place chicken drumsticks in a large resealable plastic bag or bowl. Pour the marinade over the chicken, turning to coat evenly. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.
  3. Preheat an outdoor grill to medium-high heat (about 400°F/200°C). Lightly oil the grill grates.
  4. Remove chicken from marinade, letting excess drip off. Discard remaining marinade.
  5. Grill the drumsticks, turning occasionally, until charred and cooked through, about 25-30 minutes, or until internal temperature reaches 165°F (74°C).
  6. Transfer to a platter and let rest for 5 minutes before serving.
