Ingredients
1 (9-inch) round or square cake, baked and cooled
1 batch buttercream frosting (about 2 cups)
2 cups assorted jellybeans
1/4 cup sprinkles (optional)
Instructions
Place the cooled cake on a serving plate or cake board. Apply a thin crumb coat of buttercream frosting and refrigerate for 15 minutes.
Apply a final layer of frosting, smoothing with an offset spatula.
Decorate the sides of the cake by pressing jellybeans into the frosting in a pattern or randomly, covering the entire side.
For the top, arrange jellybeans in concentric circles, a spiral, or a design of your choice. Fill any gaps with sprinkles if desired.
Refrigerate the cake for at least 30 minutes to set the frosting before serving.
Tips
Use a variety of jellybean colors for a vibrant look.
If jellybeans are sticky, toss them with a little powdered sugar to make them easier to handle.
Store leftover cake in an airtight container in the refrigerator for up to 3 days.
