  2. Heat a tamagoyaki pan or small non-stick skillet over medium heat. Add a little oil and spread evenly.
  3. Pour a thin layer of egg mixture (about 1/3 of total) into the pan, tilting to cover the bottom. Cook until just set but still moist on top.
  4. Spoon half of the meat mixture along one edge of the egg. Using a spatula, carefully roll the egg over the filling to the opposite side.
  5. Push the rolled omelette to the starting edge, oil the pan again, and pour another thin layer of egg. Lift the existing roll to let the raw egg flow underneath.
  6. Repeat with remaining egg and meat mixture, rolling and layering until all ingredients are used.
  7. Remove from pan, let cool slightly, then slice into bite-sized pieces. Serve warm or at room temperature.
