1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Fukujinzuke (Japanese pickled vegetables) for serving (optional)
Instructions
Place chicken breasts between plastic wrap and pound to even 1/2-inch thickness. Season with salt and pepper.
Set up breading station: flour in one dish, beaten eggs in another, panko in a third. Dredge each chicken breast in flour, then egg, then panko, pressing firmly to adhere.
Heat 1 inch of oil in a deep skillet to 350°F (175°C). Fry chicken until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
In a large pot, sauté onion and carrots over medium heat until onion is translucent, about 5 minutes.
Add chicken broth, curry powder, soy sauce, ketchup, Worcestershire sauce, and bay leaf. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 15 minutes.
Remove bay leaf. Stir in cornstarch slurry and simmer until sauce thickens, about 2 minutes. Season with salt and pepper to taste.
Slice chicken katsu into strips. Serve over rice, ladle curry sauce on top, and garnish with fukujinzuke if desired.
Tips
For extra crispy katsu, use fresh panko and don't overcrowd the pan when frying.
Leftover curry sauce can be refrigerated for up to 3 days or frozen for 1 month.
Serve with tonkatsu sauce on the side for dipping the chicken.
