Ingredients
- 1 lb beef chuck, thinly sliced
- 8 cups beef broth
- 1/4 cup soy sauce
- 2 tbsp mirin
- 1 tbsp sugar
- 4 cloves garlic, minced
- 1 inch ginger, sliced
- 1 lb udon noodles
- 4 green onions, sliced
- 4 sheets nori, torn into pieces
- 1 tbsp sesame oil
- Salt to taste
Instructions
- In a large pot, heat sesame oil over medium-high heat. Add beef slices and cook until browned, about 3 minutes.
- Add garlic and ginger, cook for 1 minute until fragrant.
- Pour in beef broth, soy sauce, mirin, and sugar. Bring to a boil, then reduce heat and simmer for 30 minutes.
- While broth simmers, cook udon noodles according to package directions. Drain and set aside.
- Remove ginger slices from broth. Season with salt if needed.
- Divide noodles among bowls. Ladle hot broth and beef over noodles.
- Top with green onions and nori pieces. Serve immediately.
Tips
- For a richer broth, use dashi stock instead of beef broth.
- Thinly slice beef against the grain for tenderness.
- Store leftover soup and noodles separately to prevent sogginess.
