Ingredients
2 large baking potatoes (about 300g each)
1 tablespoon olive oil
1 teaspoon sea salt
100g mature cheddar cheese, grated
2 tablespoons unsalted butter
Freshly ground black pepper to taste
Optional: 2 tablespoons sour cream or Greek yogurt
Instructions
Preheat the oven to 200°C (400°F). Scrub the potatoes clean and pat dry. Prick each potato several times with a fork.
Rub the potatoes with olive oil and sprinkle with sea salt. Place directly on the oven rack and bake for 60-75 minutes, until the skin is crisp and a knife pierces easily.
Remove from oven and let cool slightly. Cut a cross in the top of each potato, then squeeze the sides to open it up.
Fluff the inside with a fork, then add 1 tablespoon of butter to each potato. Season with pepper.
Top generously with grated cheddar cheese. Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
Serve immediately, with optional sour cream or Greek yogurt on the side.
Tips
For extra crispy skin, bake directly on the oven rack without foil.
Leftover potatoes can be reheated in the oven at 180°C (350°F) for 10 minutes.
