Ingredients
2 large baking potatoes (about 300g each)
1 tbsp olive oil
1/2 tsp salt
1 can (400g) baked beans in tomato sauce
1 tbsp butter (optional)
2 tbsp grated cheddar cheese (optional)
Instructions
Preheat the oven to 200°C (400°F).
Scrub the potatoes clean and pat dry. Prick each potato several times with a fork.
Rub the potatoes with olive oil and sprinkle with salt.
Place the potatoes directly on the oven rack and bake for 60-75 minutes, until the skin is crisp and the inside is soft when pierced with a knife.
While the potatoes bake, heat the baked beans in a small saucepan over medium heat until hot, stirring occasionally.
Once the potatoes are done, cut a cross on top of each and squeeze open. Fluff the flesh with a fork and add a knob of butter if desired.
Spoon the hot beans over the potatoes and top with grated cheese if using. Serve immediately.

For extra crispy skin, rub the potatoes with oil and salt just before baking.
