Ingredients
4 large baking potatoes (about 300g each)
2 tbsp olive oil
1 tsp sea salt
4 tbsp butter
200g grated cheddar cheese
1 can (400g) baked beans
4 tbsp sour cream (optional)
Fresh chives for garnish (optional)
Instructions
Preheat oven to 200°C (400°F). Scrub potatoes clean and dry thoroughly. Prick each potato several times with a fork.
Rub potatoes with olive oil and sprinkle with sea salt. Place directly on oven rack or on a baking tray.
Bake for 60-75 minutes until skin is crisp and a knife inserts easily. For extra crispiness, bake for an additional 10 minutes.
Remove from oven. Cut a cross on top of each potato and squeeze open. Add a knob of butter to each.
Top with grated cheese, baked beans, or sour cream. Garnish with chives if desired. Serve immediately.
Tips
Choose even-sized potatoes for uniform cooking.
Leftover jacket potatoes can be reheated in the oven or air fryer.
For a vegan version, use dairy-free butter and cheese, and top with beans or chili.
