Ingredients
1 (6-inch) Italian roll or hoagie bun
2 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon dried oregano
Salt and black pepper to taste
4 slices Genoa salami
4 slices capicola (ham)
4 slices mortadella
2 slices provolone cheese
1/4 cup shredded lettuce
2 slices tomato
2 tablespoons sliced pepperoncini or giardiniera
Instructions
Slice the roll in half horizontally. If desired, toast the cut sides under a broiler for 1-2 minutes until lightly golden.
In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
Brush the cut sides of the roll with the vinaigrette.
On the bottom half of the roll, layer the salami, capicola, and mortadella, folding the meats to fit.
Top with provolone cheese, then lettuce, tomato slices, and pepperoncini or giardiniera.
Close the sandwich with the top half of the roll. Press down gently, then slice in half diagonally. Serve immediately.
Tips
For a warm sub, wrap in foil and bake at 350°F for 10 minutes.
