Ingredients
1 tbsp olive oil
4 Italian sausage links (sweet or hot)
1 large onion, sliced
2 bell peppers (red and green), sliced
3 cloves garlic, minced
1/2 cup tomato sauce
1/4 cup water
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
4 sub rolls, split and toasted
Instructions
Heat olive oil in a large skillet over medium-high heat. Add sausages and cook, turning occasionally, until browned on all sides, about 5 minutes. Remove sausages and set aside.
In the same skillet, add onion and bell peppers. Cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in tomato sauce, water, oregano, salt, and black pepper. Return sausages to the skillet, nestling them into the pepper mixture. Reduce heat to low, cover, and simmer for 15 minutes, or until sausages are cooked through.
To serve, place one sausage on each toasted sub roll and top with peppers and onions. Spoon some of the pan juices over the top. Serve immediately.
Tips
For extra flavor, use a mix of sweet and hot Italian sausages.
To toast sub rolls, place them cut-side up under the broiler for 1-2 minutes until golden.
Leftover sausage and peppers can be stored in the refrigerator for up to 3 days.
