Ingredients
1 lb pizza dough, divided into 2 balls
2 tbsp olive oil, divided
1/2 lb sweet Italian sausage, casings removed
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1/2 yellow onion, thinly sliced
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 tsp dried oregano
Salt and black pepper to taste
Instructions
Preheat oven to 500°F (260°C) with a pizza stone or inverted baking sheet inside for at least 30 minutes.
On a floured surface, stretch each dough ball into a 12-inch thin round. Place on floured parchment paper.
Heat 1 tbsp olive oil in a skillet over medium-high heat. Add sausage and cook, breaking into crumbles, until browned, about 5 minutes. Transfer to a plate.
In the same skillet, add remaining 1 tbsp olive oil, bell peppers, and onion. Cook until softened and lightly charred, about 5 minutes. Season with salt and pepper.
Top each pizza dough with half the mozzarella, sausage, peppers and onions, Parmesan, and oregano.
Slide pizzas (on parchment) onto the hot stone or baking sheet. Bake until crust is golden and cheese is bubbly, 10-12 minutes.
Let cool slightly, slice, and serve.
Tips
For extra crispness, preheat the pizza stone for a full hour.
Leftover pizza can be reheated in a 375°F oven for 5 minutes.
Substitute provolone for mozzarella for a sharper flavor.
