1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups quick-cooking oats
1/2 cup semisweet chocolate chips
Instructions

In a medium saucepan over medium heat, combine butter, brown sugar, granulated sugar, milk, and cocoa powder. Stir frequently until butter is melted and mixture comes to a gentle boil.
Let boil for 1 minute without stirring, then remove from heat.
Stir in peanut butter and vanilla extract until smooth.
Add oats and chocolate chips, stirring until well combined.
Transfer mixture to prepared pan and press firmly into an even layer using a spatula or your hands.
Refrigerate for at least 2 hours until firm. Lift out using parchment overhang, cut into 16 bars, and serve.
Tips
Store in an airtight container in the refrigerator for up to 1 week.
For a crunchier texture, use old-fashioned rolled oats instead of quick-cooking oats.
Substitute almond butter or sunflower seed butter for peanut butter if needed.
