- 2 cups water
- 2 tablespoons chopped fresh cilantro
Instructions
- Rinse basmati rice in cold water until water runs clear. Soak in water for 20 minutes, then drain.
- Heat ghee in a heavy-bottomed pot over medium heat. Add cumin seeds, bay leaf, cardamom, cloves, and cinnamon. Sauté until fragrant, about 30 seconds.
- Add sliced onion and cook until golden brown, about 5 minutes. Stir in ginger-garlic paste and green chili; cook for 1 minute.
- Add mixed vegetables and cauliflower; sauté for 2-3 minutes. Stir in yogurt, turmeric, garam masala, and salt. Cook for 2 minutes.
- Add drained rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender and liquid absorbed.
