A rich and creamy Mughlai-style chicken curry made with yogurt, cream, and aromatic spices. This home-cook version delivers restaurant-quality flavor with simple techniques.
In a bowl, mix yogurt, ginger-garlic paste, turmeric, chili powder, and salt. Add chicken pieces, coat well, and marinate for at least 30 minutes (or overnight in fridge).
Heat ghee in a heavy-bottomed pan over medium heat. Add bay leaves, cardamom, cinnamon, and cloves; sauté for 30 seconds until fragrant.
Add sliced onions and cook, stirring often, until deep golden brown (15-20 minutes). If needed, add a splash of water to prevent burning.
Add marinated chicken and cook on high heat for 5-7 minutes, stirring frequently, until chicken is no longer pink.
Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally. If the curry seems dry, add 1/4 cup water.
Stir in heavy cream and cashew paste. Simmer uncovered for 5 minutes until the sauce thickens.
Add garam masala and crushed fenugreek leaves; mix well. Cook for 1 more minute.
Garnish with cilantro and serve hot with naan or basmati rice.

For a lighter version, substitute cream with 1/2 cup coconut milk.
