Ingredients
1 1/2 pounds ground beef (80/20)
8 slices American cheese
4 hamburger buns
4 leaves iceberg lettuce
4 slices tomato
1/2 onion, sliced into rings
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon sweet pickle relish
1 teaspoon white vinegar
1/2 teaspoon sugar
Salt and pepper to taste
Instructions
Preheat a griddle or large skillet over medium-high heat.
Divide ground beef into 8 equal portions (about 3 oz each). Form into thin patties slightly larger than the buns. Season with salt and pepper.
Cook patties for 2-3 minutes per side until browned and cooked through. During the last minute, top each patty with a slice of American cheese and cover to melt.
While patties cook, prepare the special sauce: mix mayonnaise, ketchup, mustard, relish, vinegar, and sugar in a small bowl.
Toast buns on the griddle until golden.
Assemble burgers: spread special sauce on both bun halves. On the bottom bun, place a cheese-topped patty, then lettuce, tomato, onion slices, and another cheese-topped patty. Close with top bun.
Serve immediately.
Tips
For extra authenticity, use a flat-top griddle and smash the patties thin with a spatula.
Wrap the finished burger in foil for a few minutes to steam the bun and melt the cheese further.
Leftover special sauce can be refrigerated for up to a week.
