Ingredients
2 lbs chicken wings, separated into drumettes and flats
1 tbsp baking powder
1 tsp salt
1/2 tsp black pepper
1/2 cup hot sauce (e.g., Frank's RedHot)
1/4 cup unsalted butter, melted
1 tbsp honey
1/2 cup sour cream
1/2 cup mayonnaise
4 oz blue cheese, crumbled
1 tbsp lemon juice
1/4 tsp garlic powder
2 tbsp chopped fresh chives (optional)
Instructions
Preheat oven to 425°F. Line a baking sheet with foil and place a wire rack on top.
Pat chicken wings dry with paper towels. In a large bowl, toss wings with baking powder, salt, and pepper until evenly coated.
Arrange wings in a single layer on the wire rack. Bake for 45 minutes, flipping halfway, until golden and crispy.
While wings bake, make the dip: In a medium bowl, mix sour cream, mayonnaise, blue cheese, lemon juice, and garlic powder. Stir in chives if using. Refrigerate until serving.
In a small saucepan, combine hot sauce, melted butter, and honey. Warm over low heat, stirring, until smooth.
When wings are done, transfer to a large bowl. Pour the hot sauce mixture over and toss to coat evenly.
Serve immediately with blue cheese dip and celery sticks.
