Ingredients
1 cup granulated sugar
6 tablespoons unsalted butter, cut into pieces
1/2 cup heavy cream
1 teaspoon vanilla extract
1/4 teaspoon salt
4 scoops vanilla ice cream
1/2 cup heavy cream, whipped to soft peaks
1/4 cup chopped pecans or walnuts
Instructions
In a medium heavy-bottomed saucepan, heat the sugar over medium heat, stirring constantly with a wooden spoon. The sugar will clump and then melt into a deep amber liquid.
Once the sugar is completely melted and dark amber, immediately add the butter. Stir until the butter is melted and combined.
Slowly pour in the 1/2 cup heavy cream while stirring. The mixture will bubble vigorously. Continue to stir until smooth.
Remove from heat and stir in the vanilla extract and salt. Let the caramel cool for 5 minutes.
Place a scoop of vanilla ice cream in each of 4 serving bowls or sundae glasses.
Spoon the warm caramel sauce over the ice cream.
Top with a dollop of whipped cream and sprinkle with chopped nuts.
Serve immediately.
Tips
For a thinner caramel sauce, add an extra 2 tablespoons of cream.
Store leftover caramel sauce in an airtight container in the refrigerator for up to 2 weeks. Reheat gently before serving.
To make ahead, prepare the caramel sauce and store in the fridge. Reheat and assemble sundaes just before serving.
