Ingredients
2 teaspoons Ceylon black tea (or 1 tea bag)
1/2 cup water
2 tablespoons evaporated milk
1-2 teaspoons sugar (to taste)
Instructions
Bring water to a boil in a small saucepan. Add tea leaves or tea bag, reduce heat to low, and simmer for 3-5 minutes until very dark and strong.
Strain tea into a cup (if using loose leaves) and discard tea bag or leaves.
Stir in evaporated milk and sugar until dissolved. For a frothier texture, pour the tea back and forth between two cups from a height (a technique called 'pulling').
Serve hot immediately.
Tips
For a stronger flavor, use a blend of several black teas like Ceylon and Assam.
Adjust sweetness to your preference; traditional Hong Kong milk tea is quite sweet.
If you don't have evaporated milk, whole milk can be used but the texture will be less creamy.
