Ingredients
1 cup white sugar
1/2 cup honey
1/4 cup light corn syrup
1 tablespoon water
1 teaspoon baking soda
1/2 teaspoon vanilla extract (optional)
Instructions
Line a baking sheet with parchment paper and set aside.
In a medium heavy-bottomed saucepan, combine sugar, honey, corn syrup, and water. Stir gently to combine.
Place the saucepan over medium-high heat and bring to a boil. Insert a candy thermometer and continue to cook without stirring until the mixture reaches 300°F (hard crack stage), about 10-15 minutes.
Remove from heat immediately and quickly stir in the baking soda and vanilla extract (if using). The mixture will foam up vigorously.
Pour the hot mixture onto the prepared baking sheet. Do not spread it; let it flow naturally.
Allow to cool completely without touching for about 30-60 minutes until hard and brittle.
Once cooled, break into irregular pieces. Store in an airtight container at room temperature.
Tips
Work quickly after adding baking soda as the mixture sets fast.
Avoid stirring the mixture while boiling to prevent crystallization.
Store in a dry place; humidity will make the candy sticky.
