Ingredients
1 cup rolled oats
1/2 cup vanilla or chocolate protein powder
1/4 cup ground flaxseed
1/2 cup creamy peanut butter
1/3 cup honey
1/4 cup mini chocolate chips
2 tablespoons milk (or milk alternative)
Instructions
Line an 8x8-inch baking dish with parchment paper, leaving overhang on two sides.
In a large bowl, combine oats, protein powder, and ground flaxseed.
Add peanut butter and honey; stir until well combined. If mixture is too dry, add milk one tablespoon at a time until it holds together.
Fold in chocolate chips.
Press mixture firmly into prepared dish. Refrigerate for at least 1 hour until firm.
Lift out using parchment overhang and cut into 12 bars.

Store bars in an airtight container in the refrigerator for up to 2 weeks.
For a vegan version, use maple syrup instead of honey and dairy-free chocolate chips.
