Ingredients
- 8 oz elbow macaroni
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 2 1/2 cups whole milk
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded Gruyère cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/2 cup panko breadcrumbs
Instructions
- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- Cook macaroni according to package directions until al dente. Drain and set aside.
- In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in milk and cream. Cook, stirring, until thickened, about 5 minutes.
- Remove from heat. Add cheddar, Gruyère, salt, pepper, and paprika. Stir until cheese is melted and smooth.
- Stir in cooked macaroni. Pour into prepared baking dish. Sprinkle with panko breadcrumbs.
- Bake for 20-25 minutes until bubbly and golden on top. Let rest 5 minutes before serving.

- For a crispy topping, broil for 1-2 minutes after baking.
