Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
2 cups elbow macaroni (or other small pasta)
2 cups beef broth
1 cup milk
1 can (10.75 oz) condensed cheddar cheese soup
1 cup shredded cheddar cheese
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
Instructions
In a large skillet or Dutch oven, cook ground beef over medium-high heat until browned, breaking it apart with a spoon. Drain excess fat.
Add diced onion and minced garlic to the skillet; cook until softened, about 3 minutes.
Stir in the elbow macaroni, beef broth, milk, condensed cheddar cheese soup, paprika, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
Remove from heat and stir in shredded cheddar cheese until melted. Let sit for 2 minutes before serving.
Tips
For extra flavor, add a dash of Worcestershire sauce or mustard powder.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat with a splash of milk.
Feel free to swap ground beef for ground turkey or chicken.
Add vegetables like frozen peas or diced bell peppers along with the pasta.
