Ingredients
1 cup rolled oats
1/2 cup nut butter (e.g., peanut, almond)
1/3 cup honey or maple syrup
1/2 cup mix-ins (e.g., chocolate chips, dried fruit, nuts, seeds)
1/4 teaspoon salt
1/2 teaspoon vanilla extract
Instructions
In a large bowl, combine rolled oats, salt, and your chosen mix-ins.
In a small saucepan over low heat, warm the nut butter and honey (or maple syrup) until smooth and runny. Remove from heat and stir in vanilla extract.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated and clumps together.
For granola bars: Line an 8x8-inch pan with parchment paper. Transfer the mixture to the pan and press firmly into an even layer. Refrigerate for at least 2 hours until firm. Cut into 16 bars.
For energy bites: Roll the mixture into 1-inch balls. Place on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes until firm.
Tips
If the mixture is too dry, add a tablespoon of nut butter or honey; if too wet, add a tablespoon of oats.
