Instructions

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. Spread oats, almonds, and sunflower seeds on a baking sheet. Toast in oven for 8-10 minutes until lightly golden. Transfer to a large bowl and stir in crispy rice cereal and dried cranberries.
  3. In a small saucepan, combine honey, brown sugar, butter, vanilla, and salt. Heat over medium heat, stirring, until butter melts and sugar dissolves. Bring to a gentle boil and cook for 1 minute.
  4. Pour the hot honey mixture over the oat mixture. Stir well until everything is evenly coated.
  5. Transfer mixture to the prepared pan. Press firmly and evenly into the pan using a spatula or the bottom of a glass.
  6. Bake for 10-12 minutes until edges are golden. Cool completely in the pan on a wire rack.
  7. Once cool, use the parchment overhang to lift the slab onto a cutting board. Cut into 12 bars.
