Ingredients
2 cups rolled oats
1 cup crispy rice cereal
1/2 cup chopped almonds
1/4 cup sunflower seeds
1/4 cup honey
1/4 cup brown sugar
1/4 cup unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup dried cranberries
Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
Spread oats, almonds, and sunflower seeds on a baking sheet. Toast in oven for 8-10 minutes until lightly golden. Transfer to a large bowl and stir in crispy rice cereal and dried cranberries.
In a small saucepan, combine honey, brown sugar, butter, vanilla, and salt. Heat over medium heat, stirring, until butter melts and sugar dissolves. Bring to a gentle boil and cook for 1 minute.
Pour the hot honey mixture over the oat mixture. Stir well until everything is evenly coated.
Transfer mixture to the prepared pan. Press firmly and evenly into the pan using a spatula or the bottom of a glass.
Bake for 10-12 minutes until edges are golden. Cool completely in the pan on a wire rack.
Once cool, use the parchment overhang to lift the slab onto a cutting board. Cut into 12 bars.
Tips
Store in an airtight container at room temperature for up to a week.
For extra crunch, add 1/4 cup of chocolate chips after baking, pressing them into the warm bars.
Substitute dried cranberries with raisins, chopped apricots, or chocolate chips.
