Ingredients
2 cups coconut water
1 cup fresh orange juice
2 tablespoons fresh lemon juice
2 tablespoons honey or maple syrup
1/4 teaspoon sea salt
1/2 cup mixed berries (optional)
Instructions
In a large bowl, whisk together coconut water, orange juice, lemon juice, honey, and salt until honey and salt are dissolved.
If using berries, divide them evenly among 6 popsicle molds.
Pour the liquid mixture into the molds, leaving a little space at the top for expansion.
Insert popsicle sticks and freeze for at least 4 hours or until solid.
To unmold, run the molds under warm water for a few seconds until the popsicles release.
Tips
For a sweeter popsicle, add more honey or maple syrup to taste.
Store popsicles in a freezer bag for up to 2 weeks.
