Ingredients
2 cups whole milk
1/4 cup unsweetened cocoa powder
1/4 cup granulated sugar
1/4 cup heavy cream
1/2 teaspoon vanilla extract

Instructions
In a small saucepan, whisk together the cocoa powder, sugar, and salt. Add about 1/4 cup of the milk and whisk into a smooth paste.
Place the saucepan over medium heat and gradually whisk in the remaining milk and the heavy cream. Continue whisking until the mixture is hot and steaming, but not boiling, about 3-4 minutes.
Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, about 20 minutes.
Pour the cooled mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks.
Freeze for at least 4 hours or until solid. To unmold, run the mold under warm water for a few seconds until the popsicles release easily.
Tips
For a dairy-free version, substitute whole milk and heavy cream with full-fat coconut milk or oat milk and coconut cream.
