Ingredients
1 cup (170g) cocoa butter, chopped
1/2 cup (40g) unsweetened cocoa powder
3 tablespoons (45ml) maple syrup or honey
1/2 teaspoon vanilla extract
1/4 teaspoon sea salt
Instructions
Fill a small saucepan with 1 inch of water and bring to a simmer. Place a heatproof bowl over the saucepan, making sure the bottom doesn't touch the water.
Add the cocoa butter to the bowl and stir until completely melted.
Whisk in the cocoa powder until smooth and well combined.
Remove from heat and whisk in the maple syrup, vanilla extract, and sea salt until fully incorporated.
Pour the mixture into a silicone chocolate bar mold or a small parchment-lined dish. Tap gently to release air bubbles.
Refrigerate for at least 30 minutes, or until firm. Pop out of the mold and break into bars if needed.
Tips
Store in an airtight container in the refrigerator for up to 2 weeks.
Customize with add-ins like chopped nuts, dried fruit, or a sprinkle of flaky sea salt on top before chilling.
For a sweeter bar, increase maple syrup to 4 tablespoons.
