1 cup milk chocolate chips
1/2 cup creamy peanut butter
1/4 cup unsalted butter
1/4 cup granulated sugar
1/4 cup light corn syrup
1/2 teaspoon vanilla extract
2 cups crispy rice cereal
1/2 cup roasted salted peanuts, chopped
1/2 cup caramel sauce (store-bought or homemade)
1 cup milk chocolate chips (for coating)
Instructions
Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
In a medium saucepan over medium heat, combine 1 cup milk chocolate chips, peanut butter, and butter. Stir until melted and smooth. Remove from heat.
Stir in sugar, corn syrup, and vanilla extract until well combined. Fold in crispy rice cereal and chopped peanuts until evenly coated.
Press the mixture firmly into the prepared pan. Refrigerate for 20 minutes until firm.
Spread caramel sauce evenly over the chilled nougat layer. Return to refrigerator for 10 minutes.
Melt 1 cup milk chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Pour melted chocolate over the caramel layer and spread evenly. Refrigerate until chocolate is set, about 30 minutes.
Using the parchment overhang, lift the slab out of the pan. Cut into 12 bars with a sharp knife.
