Ingredients
2 medium russet potatoes, diced into 1/2-inch cubes
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 cup diced onion
2 large eggs
1 tablespoon butter
Chopped fresh parsley for garnish (optional)
Instructions
Place diced potatoes in a bowl, cover with cold water, and let soak for 5 minutes. Drain and pat dry thoroughly with a clean towel.
Heat olive oil in a large non-stick skillet over medium-high heat. Add potatoes in a single layer and cook without stirring for 5 minutes, until golden brown on the bottom.
Stir potatoes, then add onion, salt, pepper, paprika, and garlic powder. Cook, stirring occasionally, until potatoes are tender and crispy, about 15 minutes.
Push potatoes to one side of the skillet. Reduce heat to medium, add butter to the empty side, and crack eggs into the butter. Cook until whites are set but yolks are still runny, about 3 minutes.
Serve immediately, with eggs on top of the home fries. Garnish with parsley if desired.
Tips
For extra crispy potatoes, parboil them for 5 minutes before frying.
