Ingredients
1 whole turkey (12-14 lbs), thawed
1/2 cup unsalted butter, softened
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
2 tablespoons fresh sage, chopped
4 cloves garlic, minced
1 tablespoon salt
1 teaspoon black pepper
1 lemon, halved
1 onion, quartered
4 cups low-sodium chicken broth
1/4 cup all-purpose flour

Instructions
Preheat oven to 325°F. Remove turkey neck and giblets; pat turkey dry with paper towels.
In a bowl, mix butter, rosemary, thyme, sage, garlic, salt, and pepper. Rub mixture under skin and over turkey.
Stuff cavity with lemon and onion. Tie legs with kitchen twine; tuck wing tips under.
Place turkey on a rack in a roasting pan. Pour 1 cup broth into pan. Roast for 2 1/2 to 3 hours, basting every 30 minutes, until internal temp reaches 165°F in thigh.
Transfer turkey to a platter; tent with foil. Let rest 20 minutes.
Meanwhile, make gravy: Skim fat from pan drippings. Place pan over medium heat; whisk in flour and cook 1 minute. Gradually whisk in remaining 3 cups broth; simmer until thickened, about 5 minutes. Season with salt and pepper.
Garnish platter with fresh herbs and fruit. Serve turkey with gravy.

For crispier skin, increase oven to 425°F for last 15 minutes.
