Ingredients
1 cup rolled oats
1/2 cup chopped almonds
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/2 cup dried cranberries
1/2 cup dried apricots, chopped
1/2 cup creamy peanut butter
1/3 cup honey
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Line an 8x8-inch baking dish with parchment paper.
In a large bowl, combine oats, almonds, sunflower seeds, pumpkin seeds, cranberries, and apricots.
In a small saucepan over low heat, warm peanut butter, honey, vanilla, and salt, stirring until smooth and well combined.
Pour the peanut butter mixture over the dry ingredients and stir until everything is evenly coated.
Transfer the mixture to the prepared dish, pressing firmly and evenly into the pan.
Refrigerate for at least 1 hour until firm, then cut into 12 bars.
