Ingredients
1 large (24-inch) Italian bread loaf or 4 individual hero rolls
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces thinly sliced Genoa salami
8 ounces thinly sliced capicola (hot or sweet)
8 ounces thinly sliced provolone cheese
1 cup giardiniera (pickled vegetable relish), drained
1 cup shredded iceberg lettuce
1 medium tomato, thinly sliced
1 small red onion, thinly sliced
Instructions
Slice the bread loaf horizontally in half (or split rolls). Hollow out some of the soft interior from both halves to make room for fillings.
In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Brush the cut sides of the bread with this vinaigrette.
On the bottom half of the bread, layer the salami, capicola, and provolone cheese evenly.
Top with giardiniera, lettuce, tomato slices, and red onion slices.
Place the top half of the bread over the fillings and press down gently. Cut the sandwich into 4 equal portions (if using a large loaf) and serve immediately.
Tips
For a warm hero, wrap the assembled sandwich in foil and bake at 350°F for 10-15 minutes until the cheese melts.
Substitute meats like mortadella, ham, or pepperoni as desired.
