  2. Add ham bone (or diced ham), chicken broth, soaked beans, bay leaves, thyme, and rosemary. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, until beans are tender.
  3. If using a ham bone, remove it from the pot and shred any meat from the bone; discard the bone and return the meat to the soup.
  4. Remove bay leaves. Season with salt and pepper to taste. If desired, use an immersion blender to partially puree the soup for a creamier texture.
  5. Serve hot, garnished with fresh parsley if desired.
