  1. In a large pot, combine split peas, ham hock, onion, carrots, celery, garlic, bay leaf, thyme, salt, pepper, and water or broth.
  2. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally, until peas are tender and ham hock is falling apart.
  3. Remove ham hock from pot. Let cool slightly, then shred meat, discarding skin and bones. Return meat to soup.
  4. Discard bay leaf. Adjust seasoning with salt and pepper. Serve hot.
