- 4 whole herring, gutted and scaled
- 2 tablespoons olive oil

- 1/2 teaspoon black pepper
- 1 lemon, cut into wedges
- 2 tablespoons fresh dill, chopped
Instructions
- Rinse the herring under cold water and pat dry with paper towels.
- Brush each fish inside and out with olive oil, then season generously with salt and pepper.
- Preheat a grill to medium-high heat (about 400°F / 200°C).
- Place the herring directly on the grill grates. Cook for 4 minutes per side, until the skin is charred and the flesh flakes easily with a fork.
