Ingredients
1 seedless watermelon, cut into 4 (1-inch-thick) rounds
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup crumbled feta cheese
2 tablespoons fresh mint leaves, chopped
1 tablespoon balsamic glaze
Instructions
Preheat an outdoor grill to medium-high heat (about 400°F).
Cut the watermelon into 1-inch-thick rounds, then cut each round in half to create half-moon steaks.
Brush both sides of the watermelon steaks with olive oil and season with salt and pepper.
Grill the watermelon steaks for 3 minutes per side, until grill marks appear and the watermelon is slightly softened.
Transfer to a platter and top with crumbled feta, fresh mint, and a drizzle of balsamic glaze.
Serve immediately or at room temperature.
Tips
For extra flavor, add a pinch of chili flakes or smoked paprika before grilling.
These steaks are best served fresh off the grill, but can be stored in the fridge for up to 2 days and served cold or reheated.
Try using a flavored balsamic glaze like fig or pomegranate for a different twist.
