Ingredients
2 large sweet onions (e.g., Vidalia), thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme (optional)
4 slices sourdough or country bread
4 slices provolone or Swiss cheese
2 tablespoons Dijon mustard (optional)
Instructions
In a large skillet over medium heat, melt 1 tablespoon butter with olive oil. Add sliced onions, salt, pepper, and thyme. Cook, stirring occasionally, until onions are deeply caramelized, about 15-20 minutes. Set aside.
Spread remaining butter on one side of each bread slice. Place bread butter-side down on a work surface. Spread Dijon mustard on the other side if using.
Divide caramelized onions evenly between two bread slices (butter-side down). Top each with 2 slices of cheese. Place remaining bread slices on top, butter-side up.
Heat a large skillet or griddle over medium heat. Grill sandwiches until golden brown and cheese is melted, about 3-4 minutes per side. Press gently with a spatula.
Remove from heat, let cool slightly, then slice in half and serve warm.
Tips
For extra flavor, add a sprinkle of fresh thyme or a dash of balsamic vinegar to the onions during cooking.
