Ingredients
12 fresh sardines, cleaned and scaled
3 tablespoons olive oil
2 cloves garlic, minced
1 lemon, juiced and zested
1 tablespoon fresh parsley, chopped
1 tablespoon fresh oregano, chopped
Salt and pepper to taste
Lemon wedges for serving
Instructions
Rinse sardines under cold water and pat dry with paper towels.
In a small bowl, whisk together olive oil, garlic, lemon juice, lemon zest, parsley, oregano, salt, and pepper.
Place sardines in a shallow dish and pour the marinade over them. Turn to coat evenly. Cover and refrigerate for 30 minutes.
Preheat grill to medium-high heat (about 400°F/200°C).
Lightly oil the grill grates. Place sardines on the grill and cook for 3-4 minutes per side, until skin is crispy and flesh is opaque.
Transfer to a serving platter and serve immediately with lemon wedges.
Tips
For best results, use the freshest sardines available.
If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
