Ingredients
2 porterhouse steaks (about 1.5 inches thick, 24-32 oz each)
2 tablespoons kosher salt
1 tablespoon black pepper
2 tablespoons olive oil
4 sprigs fresh rosemary (optional)
Instructions
Remove steaks from refrigerator 30-40 minutes before grilling to bring to room temperature. Pat dry with paper towels.
Season generously on all sides with salt and pepper. Drizzle with olive oil and rub to coat.
Preheat grill to high heat (450-500°F). Clean and oil grates.
Place steaks on grill and cook for 4-5 minutes without moving, until a deep crust forms.
Flip steaks and cook for another 4-5 minutes for medium-rare (internal temp 130-135°F). For medium, cook 5-6 minutes per side.
During last 2 minutes, add rosemary sprigs to grill for aromatic smoke if desired.
Remove steaks to a cutting board and let rest for 5-10 minutes before slicing against the grain.
Serve with the bone as a dramatic presentation.
Tips
For even cooking, choose steaks of uniform thickness.
Letting the steak rest is crucial for juicy results.
Pair with a bold red wine like Cabernet Sauvignon.
