Ingredients
4 large portabella mushrooms, stems removed
1/4 cup balsamic vinegar
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a small bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, rosemary, salt, and pepper.
Place portabella mushrooms in a shallow dish or resealable bag. Pour marinade over mushrooms, turning to coat. Let marinate at room temperature for 15-30 minutes.
Preheat grill to medium-high heat (about 400°F/200°C).
Grill mushrooms for 4-5 minutes per side, until tender and grill marks appear. Brush with remaining marinade while grilling.
Remove from grill and let rest for 2 minutes. Serve warm.
Tips
Serve on toasted buns with lettuce, tomato, and vegan mayo for a burger.
Leftover mushrooms can be sliced and added to salads or pasta.
For extra flavor, add a splash of soy sauce or Worcestershire sauce (if not vegan) to the marinade.
