Ingredients
4 bone-in pork chops, about 1 inch thick
1/4 cup soy sauce
2 tablespoons olive oil
2 tablespoons brown sugar
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Instructions
In a small bowl, whisk together soy sauce, olive oil, brown sugar, garlic, thyme, rosemary, black pepper, and red pepper flakes until sugar is dissolved.
Place pork chops in a resealable plastic bag or shallow dish. Pour marinade over chops, turning to coat. Seal bag or cover dish and refrigerate for at least 30 minutes, or up to 4 hours.
Preheat grill to medium-high heat (about 400°F). Remove pork chops from marinade, letting excess drip off. Discard remaining marinade.
Grill pork chops for 4-6 minutes per side, or until internal temperature reaches 145°F for medium-rare or 160°F for medium. Let rest for 5 minutes before serving.
Tips
For best flavor, marinate for at least 2 hours.
Let pork chops come to room temperature for 15 minutes before grilling for even cooking.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
