Ingredients
4 fresh herring fillets (about 6 oz each)
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh dill
1 teaspoon salt
1/2 teaspoon black pepper
Lemon wedges for serving
Instructions
Rinse herring fillets and pat dry with paper towels.
In a small bowl, whisk together olive oil, lemon juice, dill, salt, and pepper.
Place herring fillets in a shallow dish, pour the marinade over them, and turn to coat. Cover and refrigerate for 30 minutes.
Preheat grill to medium-high heat (about 400°F).
Grill herring fillets skin-side down for 3-4 minutes, then flip and grill for another 2-3 minutes, until fish flakes easily with a fork.
Transfer to a serving platter and serve immediately with lemon wedges.
Tips
If using whole herring, ask your fishmonger to butterfly and debone them.
Serve with boiled new potatoes, pickled beets, and sour cream.
Leftover grilled herring can be flaked and used in salads.
