Ingredients
4 (6 oz) white fish fillets (e.g., cod, halibut, or sea bass)
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 lemons, halved
2 cups mixed salad greens
1/2 cup cherry tomatoes, halved
1/4 cup Kalamata olives
2 tablespoons chopped fresh parsley
1 tablespoon red wine vinegar
Instructions
In a small bowl, mix olive oil, garlic, oregano, smoked paprika, salt, and pepper. Brush mixture over fish fillets and let marinate for 15 minutes.
Preheat grill to medium-high heat (about 400°F).
Grill fish fillets for 4-5 minutes per side, or until cooked through and opaque. During last 2 minutes, add lemon halves cut-side down and grill until charred.
In a large bowl, combine salad greens, cherry tomatoes, olives, parsley, and red wine vinegar. Toss gently.
