Ingredients
8 bone-in, skin-on chicken thighs (about 2 lbs)
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional)
Instructions
In a small bowl, mix olive oil, minced garlic, smoked paprika, salt, black pepper, onion powder, and cayenne pepper (if using) to create a marinade.
Place chicken thighs in a large bowl or resealable bag. Pour marinade over chicken and toss to coat evenly. Let marinate at room temperature for 15-30 minutes, or refrigerate for up to 4 hours.
Preheat grill to medium-high heat (about 400°F/200°C). Clean and oil the grates.
Grill chicken thighs skin-side down for 6-8 minutes, until skin is golden and crispy.
Flip and grill for another 6-8 minutes, or until internal temperature reaches 165°F (74°C) in the thickest part.
Remove from grill and let rest for 5 minutes before serving.
