Ingredients
2 tbsp unsalted butter
1 small onion, diced
2 cloves garlic, minced
1 (28 oz) can crushed tomatoes
1 cup chicken or vegetable broth
1 tsp sugar
1/2 cup heavy cream
Salt and pepper to taste
4 slices sourdough bread
2 tbsp mayonnaise
4 slices cheddar cheese
Instructions
In a medium pot, melt 1 tbsp butter over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook 1 minute.
Stir in crushed tomatoes, broth, and sugar. Bring to a simmer and cook 15 minutes.
Use an immersion blender to puree soup until smooth. Stir in cream and season with salt and pepper. Keep warm.
Spread mayonnaise on one side of each bread slice. Place 2 slices mayo-side down, top each with 2 slices cheese, then cover with remaining bread, mayo-side up.
In a large skillet, melt remaining 1 tbsp butter over medium heat. Add sandwiches and cook until golden brown and cheese melts, about 3-4 minutes per side.
Serve each sandwich with a bowl of soup for dipping.
