- 4 carp fillets (about 6 oz each), skin on
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh parsley
- Lemon wedges for serving
Instructions
- In a small bowl, mix olive oil, garlic, lemon juice, salt, pepper, dill, and parsley to make a marinade.
- Place carp fillets in a shallow dish, pour marinade over them, and turn to coat. Cover and refrigerate for 30 minutes.
- Preheat grill to medium-high heat (about 400°F). Oil the grates lightly.
- Grill fillets skin-side down for 4-5 minutes, then flip and grill for another 3-4 minutes until fish flakes easily with a fork.
