Ingredients
1 lb beef sirloin, thinly sliced
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp brown sugar
1 tbsp vegetable oil
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp turmeric
2 cloves garlic, minced
1/2 cup coconut milk
12 wooden skewers, soaked in water 30 minutes
1/2 cup creamy peanut butter
1/4 cup coconut milk
2 tbsp soy sauce
1 tbsp lime juice
1 tsp brown sugar
1/2 tsp red pepper flakes
Instructions
In a bowl, combine soy sauce, fish sauce, brown sugar, oil, coriander, cumin, turmeric, garlic, and 1/2 cup coconut milk. Add beef slices, toss to coat, and marinate for at least 20 minutes.
Thread beef onto soaked skewers, dividing evenly.
Grill over medium-high heat, turning once, until charred and cooked through, about 8-10 minutes.
For peanut sauce: whisk together peanut butter, 1/4 cup coconut milk, soy sauce, lime juice, brown sugar, and red pepper flakes until smooth. Add water if needed to reach desired consistency.
Serve satay skewers with peanut sauce for dipping.
Tips
Substitute chicken or pork for beef if desired.
