Ingredients
1 lb beef sirloin steak, about 1 inch thick
2 tbsp fish sauce
2 tbsp lime juice
1 tbsp brown sugar
1 clove garlic, minced
1 red chili, thinly sliced
6 oz mixed salad greens
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/2 cup fresh mint leaves
1/2 cup fresh cilantro leaves
1/4 cup roasted peanuts, chopped
Instructions
In a small bowl, whisk together fish sauce, lime juice, brown sugar, garlic, and chili to make the dressing.
Season beef with salt and pepper. Grill over high heat for 4-5 minutes per side for medium-rare. Let rest 5 minutes, then slice thinly against the grain.
In a large bowl, combine salad greens, tomatoes, cucumber, mint, and cilantro. Add half the dressing and toss.
Divide salad among plates. Top with sliced beef, drizzle with remaining dressing, and sprinkle with peanuts.
Tips
Substitute chicken or tofu for beef if desired.
